Wales Organic Farm and Its Wonderful Food

So far I’ve talked a lot about what we did in Wales, but not so much about the best part. The food!The outstanding food we had during this retreat was by far my favorite part. We made all kinds of food with the freshest ingredients you could ever imagine. This level of quality cannot be found in grocery stores at any price. Almost all of the meals we made were accompanied by a fresh salad and usually some oven warm soda bread.

Every night during circle we would have 2 participants volunteer to work in the kitchen the next day. We all got the chance to help Alicia make some of the incredible meals we all came to love.

Although the food was outstanding, the best part of the meals was enjoying with friends after a hard days work on the roundhouse. I thought it was really great to see everyone come together to enjoy some amazing food and great company. Some of my fondest memories of this trip came from these meals.

One of my favorite days was when the wild food foraging expert, Jade Mellor, took us on a walk around to show us all of the edible wild plants that weren’t being cultivated on the farm. Most people would call these weeds, but Jade taught us that there is so much you can do with them.Along with her help, we were able to make a delicious pesto sauce made with stinging nettle. Normally you’d try and stay away from eating anything with the word “sting” in it, but when puréed the nettle is not only edible, but it’s also known to have medicinal properties. What’s more, we made a salad with various greens we found on our walk.

Being able to go out into the fields and gather everything we needed for dinner was such a great feeling. Even though the farm life can be difficult sometimes, I’m so grateful to have been able to work with some of the freshest and tastiest food I’ve ever had in my life. I think its something that everyone should get to experience at some point in their lives.
